Healthy Morning Muffins

Makes 12 Muffins

1 cup Regular oatmeal
1 cup Whole wheat pastry flour
1 cup Oat bran
1 Tbsp Baking powder
½ tsp Sea salt
¼ cup Flax seed, ground
1 oz Pecans, chopped (15 halves)

3 large Eggs (free-range, omega-3 enriched)
1 Tbsp Canola oil
1 cup Carrot, grated
½ cup Applesauce
¼ cup Raisins
1 tsp Vanilla extract
Canola oil spray

Preheat oven to 375 degrees. Mix dry ingredients. Separately mix wet ingredients. Gently fold together. Spray muffin pan with canola oil and pour batter into pan. Bake at 375 for 25-30 minutes, until a toothpick inserted into the center comes out clean.
