blueberry & strawberry crumble

Serves 8

Baking Time: 20 minutes

¼ cup water
2 cups apples, cut into ½ inch pieces
¼ tsp cinnamon
2 Tbsp Tapioca , quick cooking, or 1 tsp corn starch, or 1 tsp kuzu
2 cups blueberries, frozen or fresh
2 cups strawberries, frozen or fresh
1 medium lime, juiced
1 ½ cups low-fat granola (less than 30% calories from fat)
¼ cup almonds

Optional: 4 packets of Splenda or 2 Tbsp maple syrup

Preheat oven to 375. In a saucepan, combine water, apples, cinnamon, tapioca, and optionally add Splenda. Bring to a boil and simmer for 5 minutes. Add berries and lime juice, mix well and pour into a pie dish.

Heat almonds and granola in a pan over med-high heat for 3-4 minutes stirring frequently, then sprinkle over the berries in the pie dish, then bake for 20 minutes.

To serve: garnish with fresh berries and a sprig of mint.
